CHICKEN LEG QUARTERS RECIPE

Ingredients:

4 chicken leg quarters
1-1/2 teaspoons salt
1 teaspoon hot or smoked paprika
1 teaspoon granulated garlic
½ teaspoon ground black pepper
2 tablespoons olive oil




Directions:

Preheat the oven to 400°F.

Place an oven safe cooling rack on a baking tray big enough to fit all the chicken.

Stir together the spices in a bowl.

Place the chicken on the cooling rack (in the pan) and drizzle the olive oil over the top.

Rub half the spice mix between the skin and the meat.  Rub the other half on top and on the bottom of the chicken – no need to place rub on the bones.

Bake for 40-50 minutes or until the internal temperature is 185°F and the skin is browned and crisp. Let sit for 5-10 minutes before serving.

Leftovers can be refrigerated up to 3 days.
