Hirsch’s Freezer Pack
Here’s how it works:
You order your choice of any six (6) different meat items, minimum 3 lbs of each item. These items will be cut, wrapped, and frozen to your specs. All items will be priced at regular counter prices and then discounted 15%.  
These orders must be placed 48 hours in advance. Deli products are excluded from this offer.
 
Current prices of hanging beef for side or hind quarters
is $6.99 / lb. 

Hinds average 200 lbs plus or minus and sides average 400 lbs plus or minus. These are Texas-raised cattle and grade out choice or higher. Price is inclusive of custom cutting, wrapping, marking, and freezing.


THE BEST BARBECUED PORK STEAKS

Ingredients:
3 pounds pork steaks (5-6 steaks)
24 ounces light beer
8 ounces sweet barbecue sauce

For the Spice Rub:
3 tablespoons brown sugar
2 tablespoons smoked paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon chili powder
1 teaspoon salt
½ teaspoon black pepper

For Optional Basting Liquid:
8 ounces light beer
8 ounces apple juice



Directions:
Cover pork shoulder steak in light beer and marinate for a minimum of one hour, up to overnight.

Prepare a grill. Remove the pork shoulder steaks from the beer and dry with a paper towel.

In a small bowl, mix together brown sugar, smoked paprika, onion powder, garlic powder, chili powder, salt, and pepper.

Press the spice rub into the pork steaks, coating evenly on both sides. Allow to rest at room temperature.

If you’d like to baste the pork steaks while they are grilling, combine the beer and apple juice in a small bowl.

Grill on a covered grill over medium-high heat for 12 minutes per side, basting occasionally with the basting liquid.
