Hirsch’s Freezer Pack Option.  
Here’s how it works:
You order your choice of any six (6) different meat items, minimum 3 lbs of each item. These items will be cut, wrapped, and frozen to your specs. All items will be priced at regular counter prices and then discounted 15%.  
These orders must be placed 48 hours in advance. Deli products are excluded from this offer.
 
Current prices of hanging beef for side or hind quarters is $7.99 / lb

Hinds average 200 lbs plus or minus and sides average 400 lbs plus or minus. These are Texas-raised cattle and grade out choice or higher. Price is inclusive of custom cutting, wrapping, marking, and freezing.

 
CHIMICHURRI SAUCE FOR STEAK

Ingredients:
1 cup parsley leaves, tightly packed
1 tbsp oregano leaves
4 garlic cloves, minced
2 tsp red pepper flakes, optional, adjust to taste
¼ cup red wine vinegar
½ tsp salt
Black pepper
½ cup extra virgin olive oil


Directions:
Place all ingredients except oil in a food processor.  Whizz until parsley is finely chopped but not pureed.  Alternatively chop parsley by hand.

Transfer into a small bowl.  Add oil, gently stir.  Set aside for 1 hour before use.  Overnight is even better.

Store in an airtight container in the refrigerator and use it within 3 days.  Make ¾ cup.

Serve with prime bone-in rib eye grilled steak.
